Tantalizing shrimp scampi over angel hair pasta with garlic, lemon, white wine sauce, Asiago cheese, and avocado.
Ingredients:
  • 1 (16 ounce) package angel hair pasta
  • 0.5 cup butter
  • 0.5 cup minced onion
  • 0.25 cup lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dry white wine
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 dash Worcestershire sauce
  • 1 pound peeled and deveined medium shrimp
  • 0.5 cup Asiago cheese, diced
  • 1 large avocado - peeled, pitted and diced
Instructions:
  • Bring a generously salted large pot of water to a lively boil. Cook pasta until perfectly al dente, about 2 to 3 minutes. Drain the pasta.
  • In a large skillet over medium heat, melt butter. Add onion, lemon juice, garlic, parsley, white wine, salt, pepper, and Worcestershire sauce. Cook until mixture bubbles, then increase heat to medium-high and add shrimp. Cook and stir until shrimp turn pink and opaque, about 5 minutes.
  • Present the shrimp scampi on a bed of pasta and top it off with a generous sprinkle of Asiago cheese and fresh avocado slices before serving.
