Indulge in a flavorful gumbo with shrimp, crab, chicken, sausage, vegetables, and Cajun spices. Pair it with rice, garlic bread, and a cold beer for a satisfying meal.
Ingredients:
  • 4 pounds medium shrimp
  • 2 quarts water
  • 0.5 cup corn oil
  • 0.5 cup all-purpose flour
  • 1 cup chicken broth
  • 1 (3 pound) whole chicken
  • 5 large tomatoes, chopped
  • 2 medium onions, chopped
  • 5 stalks celery, chopped
  • 1 medium green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons seafood seasoning (such as Old Bay®)
  • 1 tablespoon salt
  • 1 tablespoon ground cayenne pepper
  • 2 bay leaves
  • 3 (6 ounce) cans crabmeat, drained
  • 1 pound andouille sausage, diced
  • 2 tablespoons filé powder
Instructions:
  • Peel and devein the shrimp, then transfer them to a bowl and refrigerate. Place the shrimp heads and shells in a large pot.
  • Add 2 quarts of water to the pot and simmer over medium-low heat until the liquid is reduced by half. Strain out and discard the shrimp heads and shells, then reserve the shrimp broth.
  • In a large stockpot over medium-high heat, heat oil. Add flour and stir until dark brown and puffy, about 10 to 15 minutes. Slowly pour in chicken broth and 1 cup water. Add chicken, tomatoes, onions, celery, bell pepper, garlic, seafood seasoning, salt, cayenne pepper, and bay leaves. Bring to a boil and simmer for 1 1/2 hours until chicken is fully cooked. Check with a thermometer - it should read 165 degrees F (74 degrees C) near the bone.
  • Once the chicken has been cooked, set it aside to cool down. Remove and discard the bones, then chop the meat into 1-inch pieces.
  • Add the chopped chicken back to the pot, along with the reserved shrimp broth, crabmeat, sausage, shrimp, and filé powder. Stir well to combine. Bring to a boil, then promptly remove from heat.
  • Stir the gumbo thoroughly for 1 minute from the bottom up, then discard the bay leaves and serve the delicious dish.
