Bacon Shrimp Scampi Pasta

Irresistible dish of pasta with garlic shrimp, bacon, and creamy Parmesan sauce.
Ingredients:
  • 1 (8 ounce) package spaghetti (such as Barilla® Spaghetti Rigati)
  • 4 slices bacon, chopped
  • 2 cloves garlic, minced
  • 12 ounces jumbo shrimp, peeled and deveined
  • 0.125 teaspoon crushed red pepper flakes, or more to taste
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • salt and ground black pepper to taste
  • 3 wedges fresh lemon
Instructions:
  • Bring a large pot of salted water to a boil. Cook spaghetti until al dente, about 8 minutes, stirring occasionally.
  • In a large skillet over medium heat, crisp up the bacon for about 4 minutes. Drain on paper towels, reserving about 1 1/2 tablespoons of the flavorful grease in the skillet.
  • Drop minced garlic into sizzling oil and sauté until aromatic, about 30 seconds. Place shrimp in the pan and dust with red pepper flakes. Sear until tender and turning pink, around 2 minutes on each side. Transfer to a plate and keep aside.
  • Pour chicken broth into the hot skillet and cook for 1 minute. Add heavy cream and bring to a simmer for about 2 minutes. Then, reduce heat to low, whisk in Parmesan cheese, and cook until sauce thickens, approximately 2 minutes.
  • Reserve 1/2 cup of pasta water before draining spaghetti.
  • Add the shrimp and bacon back to the skillet and simmer for 1 minute. Mix in the spaghetti and combine all ingredients. Stir in reserved pasta water if needed for desired sauce consistency. Season with salt and pepper.
  • Sprinkle with freshly chopped parsley and accompany with a zesty lemon wedge for squeezing over the pasta.
