Succulent bacon-wrapped shrimp with a zesty chili-lime twist. Grilled or oven-roasted to crispy perfection, a must-try for BBQ gatherings.
Ingredients:
  • For the brine (optional, but recommended):
  • 1/4 cup (Diamond Crystal) kosher salt (if using Morton's kosher salt, use only 3 tablespoons)
  • 1/4 cup sugar
  • 4 cups water
  • 1 cup ice
  • For the bacon-wrapped shrimp:
  • 1 pound (12 to 20 count), raw, peeled and deveined shrimp (tail on)
  • 2 tablespoons extra virgin olive oil
  • Zest from 1 lime
  • 2 tablespoons lime juice
  • 1/2 teaspoon chipotle powder or chili powder (less or more to taste)
  • 6 to 10 strips thin bacon, cut in half (half as many pieces of bacon as there are shrimp)
Instructions:
  • Optional but highly recommended: Dissolve salt and sugar in water by whisking. Add ice and shrimp. Let sit for a maximum of 30 minutes. Remove shrimp from brine before proceeding.
  • For grilling: Get the grill going on high for direct heat or preheat the oven to 400°F. If using thin bamboo or wood skewers for grilling, soak them in water for 30 minutes beforehand.
  • Prepare the zesty seasoning for the shrimp by combining lime zest, lime juice, olive oil, and chipotle powder in a small bowl. Toss the shrimp in the flavorful mixture until evenly coated.
  • Partially cook the bacon by layering bacon pieces on a microwave-safe plate between paper towels. Microwave on high for about 1 1/2 to 2 minutes, until the bacon fat starts to melt but the bacon is still flexible.
  • Individually envelop each shrimp with a strip of partially cooked bacon.
  • For grilling, skewer the shrimp. For oven cooking, wrap each shrimp with bacon and secure with toothpicks. Arrange bacon-wrapped shrimp on a foil-lined baking pan and brush with the remaining lime chipotle mixture.
  • Cook the shrimp: Grill for 3 minutes on each side (adjust time based on grill heat), or bake at 400°F for 8 to 11 minutes until bacon is lightly browned and shrimp is cooked through.
