Spicy jalapeno-stuffed shrimp wrapped in savory bacon is a crowd favorite, perfect with dirty rice, salad, and crusty French bread. No leftovers guaranteed!
Ingredients:
  • 2 pounds large shrimp - peeled, deveined and butterflied
  • 1 (8 ounce) package Monterey Jack cheese, sliced
  • 3 fresh jalapeno peppers, seeded and julienned
  • 1 pound bacon, cut into thirds
  • 1 teaspoon Cajun seasoning, or to taste

Instructions:
  • Get the grill blazing hot and let the skewers take a water bath.
  • Insert a jalapeno strip into the butterflied shrimp, then wrap with bacon and skewer the shrimp once through the head and once through the tail. Fit about 6 shrimp per skewer, ensuring space between each for even cooking. Generously season both sides of the shrimp with Cajun seasoning.
  • Grease the grill grate and set up the shrimp skewers. Grill for 2 to 3 minutes, then flip the shrimp. Top with slices of cheese and continue grilling for another 2 to 3 minutes until the bacon is crisp, and the cheese is gooey.
