Indulge in bacon shrimp scampi served over pasta, complemented by a side of salad or sauteed veggies for a complete, satisfying meal.
Ingredients:
  • 8 slices bacon, cut into 1/4-inch pieces
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, chopped
  • 0.25 cup white wine
  • 1 teaspoon Dijon mustard
  • 1.5 pounds uncooked medium shrimp, peeled and deveined
  • 0.5 (16 ounce) package dry fettuccine pasta
  • 1 tablespoon chopped parsley, or to taste
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Cook bacon in a 12-inch oven-safe skillet over medium heat until browned and crispy, about 7 to 8 minutes. Remove bacon, keeping the flavorful drippings in the skillet.
  • In the same skillet, melt the butter and sauté the chopped garlic until fragrant, which should take about 1 to 2 minutes. Add the white wine and let it simmer for approximately 2 minutes. Stir in the mustard until fully incorporated.
  • Place the shrimp evenly in a single layer on the pan and bake in the preheated oven for 10 to 12 minutes until the shrimp are curled, pink, and no longer translucent.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine until al dente, about 8 minutes. Drain.
  • Place the cooked shrimp on a bed of pasta, generously sprinkle with crispy bacon bits, and finish with a garnish of fresh parsley.
