Delicious shrimp scampi in garlic, butter, white wine, and lemon sauce over rice makes a simple and satisfying meal any day.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 0.25 cup minced shallot
  • 2 tablespoons minced garlic, divided
  • 0.5 cup dry white wine
  • 0.25 cup freshly squeezed lemon juice
  • 0.125 teaspoon freshly ground black pepper
  • 0.125 teaspoon crushed red pepper flakes, or to taste
  • 1.5 pounds shrimp, shelled and deveined
  • 4 sprigs fresh thyme
  • 3 tablespoons chopped fresh parsley
  • 1.5 cups cooked white rice
  • 6 sprigs fresh thyme for garnish
Instructions:
  • In a large nonstick skillet over medium heat, melt butter with olive oil. Sauté shallots until softened for 2 to 3 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  • Combine white wine, lemon juice, salt, black pepper, and red pepper flakes in the pot and bring to a boil. Cook for 4 minutes.
  • Add succulent shrimp and 4 fragrant sprigs of thyme to the pan, cooking until the shrimp start to turn pink, about 2 to 3 minutes. Transfer the shrimp onto a plate and set aside.
  • Simmer the liquid until it's reduced by half, about 3 to 5 minutes.
  • Add the shrimp back to the skillet, discard the thyme sprigs, and sprinkle in the parsley. Cook until the shrimp turns a vibrant pink on the outside and the flesh is opaque, which should take about 1 to 2 minutes.
  • Plate the succulent shrimp and flavorful sauce over a bed of steaming, fluffy rice. For an added touch of elegance, adorn each dish with delicate fresh thyme sprigs, if desired.
