Gluten-free cassava flour tortillas: soft, pliable, and durable, with a taste reminiscent of whole wheat.
Ingredients:
  • 0.5 cup lukewarm water
  • 0.25 teaspoon salt
  • 1 cup cassava flour
  • 2.5 tablespoons vegetable oil
Instructions:
  • Get your tortilla press ready by placing two pieces of parchment paper on it. Set it aside for later use.
  • Add warm water to a bowl and stir in salt until fully dissolved.
  • Mix flour, salt, water, and oil in a bowl until a smooth dough forms. Knead the dough on a smooth surface until compact. Divide into 4 equal pieces and roll each into a ball.
  • Preheat a griddle over medium-high heat. Place one dough ball between 2 pieces of parchment paper in a tortilla press and press down. Remove the top parchment paper, flip the tortilla onto your hand, and carefully peel off the second piece of paper. Return the parchment paper back onto the tortilla press. Immediately cook the pressed tortilla on the hot griddle until bubbles form, then flip and cook the other side until browned. Be patient and avoid flipping the tortilla too early to prevent breakage. Repeat with the rest of the dough balls.
  • Enjoy while hot or reheat in the microwave covered with a cloth for 30 seconds at 600W.
