Toasted farofa

Crunchy toasted cassava flour, perfect for stuffing, as a side for grilled meats, or adding texture to stews.
Ingredients:
  • 1 small red onion
  • 1 clove of garlic
  • 50g butter or olive oil
  • 200g cassava (manioc) meal
Instructions:
  • Peel and finely chop the onion and garlic. Heat butter or oil in a frying pan over medium heat. Sauté the onion for 6 to 8 minutes until soft. Add garlic and cook for 1 more minute. Mix in the cassava meal and cook for 5 to 10 minutes until golden brown and crumbly. Serve hot, but you can reheat leftovers in a pan.
