Make gluten-free crepes using cassava flour for a quick and low-carb option.
Ingredients:
  • 1 cup milk
  • 2 egg whites
  • 2 tablespoons melted butter
  • 1 tablespoon white sugar
  • 2 teaspoons lemon juice
  • 1 pinch salt
  • 1.3333333730698 cups cassava flour
Instructions:
  • In a bowl, combine milk, egg whites, butter, sugar, lemon juice, and salt. Slowly incorporate cassava flour until mixture is smooth and no lumps remain. The batter should be thin yet able to coat a spoon.
  • Heat a nonstick pan over gentle heat. Pour in 1/4 cup of batter and swirl pan swiftly to create a thin crepe. Cook until lightly golden, around 3 minutes per side. Serve crepe and continue with rest of the batter.
