Low-carb alternative to mashed potatoes using smashed cauliflower.
Ingredients:
  • 2 (16 ounce) packages frozen cauliflower
  • 0.25 cup butter
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a pot, submerge the cauliflower in water and bring to a boil. Simmer until tender, approximately 10 minutes. Drain well.
  • Place the drained cauliflower back into the pot. Add butter, garlic, salt, and pepper. Mash until it's smooth like mashed potatoes.
