Decadent cauliflower mash. A flavorful veggie side!
Ingredients:
  • 1 large head cauliflower, cut into florets
  • 3 cups chicken broth
  • 3 tablespoons butter
  • 1 cup shredded Vermont white Cheddar cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • 1. In a large saucepan, quickly bring cauliflower and chicken broth to a boil over high heat. 2. Lower the heat to medium, cover, and let the mixture simmer for 10 minutes. 3. Remove the lid and increase the heat to medium-high. 4. Cook until the cauliflower is soft and the liquid has reduced by half, approximately 10 more minutes.
  • Take the cauliflower off the heat, then mix in the butter, Cheddar cheese, and Parmesan cheese. Use a potato masher to blend until the cheeses are melted and the cauliflower is smooth. Season with salt and pepper to taste.
