Delicious gluten-free, paleo pizza crust made with cassava flour and arrowroot, grilled to perfection.
Ingredients:
  • coconut oil cooking spray
  • 0.75 cup lukewarm water
  • 0.75 teaspoon coconut sugar
  • 0.75 teaspoon active dry yeast
  • 1.5 teaspoons avocado oil (such as Chosen Foods®)
  • 0.5 teaspoon salt
  • 0.25 teaspoon Italian seasoning
  • 0.66666668653488 cup cassava flour (such as Otto's®), or more as needed
  • 0.25 cup arrowroot powder
  • 0.75 teaspoon gelatin
Instructions:
  • Get the grill ready by preheating it to medium heat and giving the grate a light greasing.
  • Combine water, coconut sugar, and yeast in a measuring cup, stirring until well mixed. Allow yeast to soften and create a creamy foam, around 5 minutes. Mix in avocado oil, salt, and Italian seasoning until thoroughly combined.
  • In a bowl, mix cassava flour, arrowroot powder, and gelatin. Pour in the yeast mixture and stir well with a wooden spoon. Gradually add more cassava flour, 1 tablespoon at a time, until the dough comes together.
  • Divide the dough into 4 equal portions and shape into balls. Place one dough ball on a dusted piece of parchment paper and generously sprinkle with arrowroot powder. Cover with another piece of parchment paper and roll out into a 4-inch pizza crust. Repeat with the remaining dough balls.
  • Peel off the top parchment paper. Spritz the top of each crust with coconut cooking spray. Then, flip them over onto the grill, with the greased side facing down. Grill until they turn a beautiful golden brown, for approximately 7 minutes.
