Low-carb steak and vegetable fajitas wrapped in crisp lettuce cups for a healthier twist!
Ingredients:
  • 2 tablespoons buttery spread (such as Smart Balance®)
  • 1 (1 ounce) package fajita seasoning
  • 1 white onion, chopped
  • 2 cloves garlic, crushed
  • 1 red bell pepper, cut into small cubes
  • 1 pound steak, cut into very small pieces
  • 10 cremini mushrooms, thinly sliced
  • 0.5 head iceberg lettuce, leaves separated
Instructions:
  • In a large skillet, melt the buttery spread. Stir in fajita seasoning until well combined. Cook the onion and garlic for 2 minutes, then add the red pepper and cook for an additional 2 minutes. Add the steak and mushrooms, cooking until the steak is cooked through but still juicy, about 2 minutes. Remove from heat and let stand for 5 minutes before serving.
  • Present the dish in delicate lettuce cups while still warm.
