Spicy twist on classic chicken fajitas.
Ingredients:
  • 400g chicken breast fillets, trimmed, cut into thin strips
  • 1 red onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 400g can chopped tomatoes
  • 20.00 ml chipotle chillies in adobo sauce or chilli jam (see note)
  • 1.25 gm ground cumin
  • 2.00 gm brown sugar
  • Juice of 1 lime, plus wedges to serve
  • 1 bunch coriander, leaves chopped
  • Pickled jalapeno chillies (see note), to serve
  • Avocado, sliced, to serve
  • Sour cream, to serve
  • 2 tomatoes, sliced, to serve
  • Steamed rice, optional, to serve
  • 2 butter lettuces, outer leaves discarded, leaves separated
Instructions:
  • In a large saucepan over medium-high heat, warm 1 tablespoon of oil. Sear the chicken in 2 batches for 2-3 minutes until golden. Set aside the cooked chicken.
  • Place the pan back on medium heat and pour in the remaining 1 tablespoon of oil. Saute half of the onion for 3-4 minutes until softened. Add garlic, tomato, chipotle, cumin, and sugar. Bring to a boil, then simmer on low heat for 15 minutes until thickened. Mix in the chicken and cook for an additional 5 minutes until done. Season with salt and pepper, and finish with a squeeze of lime juice.
  • Prepare small bowls with coriander, jalapeno, avocado, sour cream, tomato, remaining onion, and rice. Serve alongside chicken, lettuce for wrapping, and lime wedges for squeezing.
