Customizable and simple fajitas for a fast and delicious meal.
Ingredients:
  • 4 chicken breast fillets
  • 2 red capsicums
  • 12 fajita tortillas
  • 1 curly green lettuce, leaves separated
  • 2 ripe tomatoes, chopped
  • 117.50 gm sour cream
  • 3 garlic cloves, crushed
  • 27.60 gm vegetable oil
  • 65.63 gm lime juice
Instructions:
  • Slice the chicken fillets thinly against the grain and arrange them in a shallow glass or ceramic dish.
  • Prepare the marinade by combining minced garlic, olive oil, and fresh lime juice with the chicken. Mix well to ensure the chicken is evenly coated. Cover the container and refrigerate for 1 to 8 hours, rotating the chicken occasionally for maximum flavor infusion.
  • Grease and heat a chargrill or barbecue on medium-high heat. Slice capsicum lengthwise, removing seeds and membrane. Grill for 3-4 minutes, turning occasionally, until tender and slightly charred.
  • Turn up the heat to high. Remove chicken from marinade and discard the marinade. Sear the chicken in batches for 2 to 3 minutes until golden and fully cooked.
  • Heat the tortillas according to the package instructions. Present them beautifully on a platter alongside the chicken, bell peppers, lettuce, tomatoes, and sour cream. Allow everyone to customize their own delicious fajitas.
