Use lettuce instead of bread for delicious low-carb chicken parcels.
Ingredients:
  • 2 coriander roots (from a bunch of fresh coriander), finely chopped
  • 48.80 gm Worcestershire sauce
  • 600g skinless chicken breast fillets, trimmed of excess fat, sliced
  • 2 small red onions, thinly sliced
  • 1 red capsicum, thinly sliced
  • 9.20 gm olive oil
  • Large leaves from 1 butter lettuce
  • 1 avocado, roughly chopped
  • 82.50 ml tomato salsa
  • Lime wedges, to serve
Instructions:
  • In a bowl, combine garlic, coriander, Worcestershire sauce, and 1 tablespoon of lime juice. Add chicken and mix well to coat. Cover and refrigerate for 15 minutes before proceeding.
  • Mix together the onion, capsicum, olive oil, and remaining lime juice in a bowl.
  • Prepare your chargrill with a light coating of oil over medium-high heat. Once hot, cook the chicken and vegetables in batches for 4-5 minutes until the chicken is fully cooked and nicely browned all around.
  • Present the chicken mixture alongside fresh lettuce leaves, ripe avocado, zesty salsa, and tangy lime wedges for a customizable dining experience.
