Chicken fajita tray bake recipe

Try this quick and flavorful one-pan Mexican chicken traybake for a tasty dinner in just 40 minutes!
Ingredients:
  • 12 chicken tenderloins (see notes)
  • 36.40 gm Extra Virgin Olive Oil
  • 40g sachet fajita spice mix
  • 2 red onions, cut into wedges
  • 1 large red capsicum, thickly sliced
  • 1 large yellow capsicum, thickly sliced
  • 2 avocados
  • 31.50 gm lime juice
  • 125.00 ml fresh coriander sprigs
  • 1 fresh jalapeño chilli, thinly sliced (see notes)
  • 8 burrito tortillas, warmed
  • Coles Light Sour Cream, to serve
  • Lime wedges to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a baking tray with baking paper. In a bowl, combine chicken with half the oil and 1 1⁄2 tablespoons of spice mix. Mix well to coat evenly.
  • Spread onion and capsicums on the tray. Drizzle with the remaining oil and sprinkle with the rest of the spice mix. Toss to evenly coat. Add the chicken on top. Bake for 20-25 minutes or until the chicken is fully cooked.
  • In a bowl, combine mashed avocado, lime juice, salt, and pepper. Sprinkle coriander and chili over chicken and vegetables. Serve with tortillas, guacamole, sour cream, and lime wedges.
