Whip up a quick and fiery Mexican tray bake in under 10 minutes with minimal effort.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 600g Chicken Breast Stir-fry
  • 40g packet spice mix for fajitas
  • 12 small white corn tortillas
  • 2 green shallots
  • 280g jar Chargrilled Peppers, drained, coarsely chopped
  • 200g tub avocado dip
  • Crème fraîche, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat the grill on high. Drizzle half of the tablespoon of oil over a baking tray and place it under the grill to heat.
  • Place the chicken in a large bowl and add the spice mix. Use your hands to toss until the chicken is evenly coated while the oil on the tray heats up.
  • Once the oil is hot, evenly spread the chicken mixture on the tray. Drizzle the remaining 1/2 tablespoon of oil over the top. Grill for an additional 3 minutes.
  • Wrap the tortillas snugly in foil and place them under the grill alongside the chicken. Finely chop the shallots.
  • Combine the peppers with the chicken on the tray and mix well. Grill for 2 minutes, or until the chicken is fully cooked.
  • To plate, arrange the grilled chicken on a serving platter alongside warm tortillas, creamy avocado dip, and tangy crème fraîche. Finish by garnishing with shallots and fresh coriander.
