Oven-baked fajita chicken with flavorful seasoning, onions, and red peppers for a quick and easy meal.
Ingredients:
  • cooking spray
  • 2 red bell peppers, sliced
  • 1 large onion, sliced
  • 2 pounds skinless, boneless chicken breasts, cut into thin strips
  • 1 (1 ounce) package fajita seasoning mix, divided
  • 2 tablespoons vegetable oil, divided
  • 8 (6 inch) flour tortillas
  • 0.5 cup sour cream, or to taste
  • 0.5 cup salsa, or to taste
  • 0.5 cup chopped fresh cilantro, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously spray a 9x13-inch glass baking dish with cooking spray.
  • Arrange the red bell peppers and onion evenly in the baking dish.
  • Sprinkle chicken strips with a touch of fajita seasoning mix. Heat 2 teaspoons vegetable oil in a skillet over medium heat and sauté the seasoned chicken until golden brown on both sides, approximately 2 minutes per side.
  • Add the chicken to the baking dish along with the bell peppers and onion. Sprinkle the remaining fajita seasoning mix over the top, drizzle with vegetable oil, and mix well until everything is evenly coated.
  • Roast in the oven, giving it a stir halfway, until chicken is cooked through, for approximately 30 minutes.
  • Fill each tortilla with the savory chicken mixture and garnish with dollops of creamy sour cream, zesty salsa, and fresh cilantro leaves.
