Cheesy chicken fajita melts - flavorful and mess-free sandwich!
Ingredients:
  • 3 tablespoons vegetable oil
  • 6 (6 ounce) skinless, boneless chicken breast halves, thinly sliced
  • 0.5 cup sliced onions
  • 0.5 cup sliced red bell pepper
  • 0.5 cup tomato juice
  • 2 tablespoons taco seasoning mix
  • 1 cup salsa
  • 8 (1/2 inch thick) slices French bread
  • 2 cups shredded Cheddar cheese
Instructions:
  • In a large skillet over medium-high heat, sizzle the chicken in hot oil until beautifully browned, roughly 5 minutes.
  • Cook sliced onions and red peppers in a sizzling pan for 5 minutes until tender. Add tomato juice and taco seasoning, stir until well combined. Continue cooking for another 7 minutes until the sauce thickens and the chicken is fully coated.
  • Preheat the broiler and position the oven rack 6 inches from the heat source.
  • Spread a generous amount of salsa on each slice of French bread, ensuring full coverage. Add a generous portion of the flavorful chicken mixture on top of the salsa-covered bread. Sprinkle each sandwich liberally with a quarter cup of flavorful Cheddar cheese for a delicious finishing touch.
  • Place the sandwiches under the broiler until the cheese is gooey and lightly golden, about 5 minutes.
