Delicious chicken fajita pasta bake with ziti, black beans, corn, and a flavorful salsa and cream cheese sauce.
Ingredients:
  • 1 pound ziti pasta
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 pound boneless chicken breast, cubed
  • 1 (16 ounce) jar salsa
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (1 ounce) package taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (16 ounce) package shredded Cheddar cheese, divided
Instructions:
  • Fill a large pot with gently salted water and bring to a vigorous boil. Add ziti and bring back to a boil. Cook, stirring occasionally, until al dente, about 10 minutes. Drain.
  • Heat oil in a skillet over medium heat. Sauté onion and green pepper until soft, about 5 to 7 minutes. Transfer to a bowl.
  • Sear the chicken in the skillet until fully cooked through, 7 to 10 minutes.
  • In a saucepan over low heat, melt cream cheese with salsa and taco seasoning, stirring constantly for about 5 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Mix ziti, chicken, salsa and onion mixtures, black beans, corn, and half of the Cheddar cheese in a large bowl until evenly combined. Transfer the mixture to a baking pan.
  • After 20 minutes in the preheated oven, sprinkle the remaining Cheddar over the top. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
