Beef fajitas in lettuce cups

Make homemade Mexican fajitas quickly.
Ingredients:
  • 30g pkt Taco Spice Mix
  • 65.63 gm lime juice
  • 600g Beef Rump Steak, fat trimmed
  • 82.50 ml Greek-style yoghurt
  • 1 red onion, thickly sliced
  • 2 large mixed red and yellow capsicums, thickly sliced
  • 8 trimmed iceberg lettuce leaves
  • 125.00 ml coriander sprigs
  • Steamed frozen corn cobs, to serve
Instructions:
  • In a dish, mix 2 tablespoons of seasoning with 2 tablespoons of lime juice. Add the steak and coat. In a separate bowl, combine yogurt with the remaining lime juice.
  • In a sizzling chargrill, heat half of the oil over medium-high heat. Grill beef for 3-4 mins per side, or until it reaches your preferred doneness. Move beef to a plate, cover, and let it rest for 5 mins before serving.
  • Grill onion and capsicums in the remaining oil until tender, then sprinkle with the remaining seasoning towards the end of cooking, about 5-7 mins.
  • Slice the beef, then layer the lettuce on plates. Top with onion, capsicum, beef, yogurt mixture, and coriander. Serve with corn on the side.
