Beef Fajita Bowls

Beef fajitas served in a bowl with crispy tortilla strips as a delicious topping.
Ingredients:
  • 1 cup uncooked regular long-grain rice
  • 1 pound boneless beef sirloin steak
  • 2 tablespoons vegetable oil
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), cut into 4x1/2-inch strips
  • 1 bag (1 pound) frozen stir-fry bell peppers and onions
  • 1/2 cup frozen corn
  • 1 cup thick & chunky salsa
  • 2 tablespoons lime juice
  • 2 tablespoons chili sauce
  • 1/2 teaspoon ground cumin
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Prepare the rice according to package instructions.
  • Slice the beef into 2-inch strips with the grain, then slice the strips into 1/8-inch slices against the grain.
  • Preheat a 12-inch nonstick skillet over medium-high heat. Add oil and swirl to coat the bottom. Cook tortilla strips in the oil for 1 to 2 minutes per side, adding more oil if needed, until they are crispy and golden brown. Drain the strips on a paper towel.
  • Sear beef in a hot skillet for 4 to 5 minutes until cooked through. Take out of the skillet.
  • Combine bell pepper mixture and corn in the skillet and sauté for 1 minute. Cover and cook for 2 to 3 minutes, stirring occasionally, until they are crisp-tender. Add beef, salsa, lime juice, chili sauce, and cumin. Cook for an additional 2 to 3 minutes until heated through. Finish by stirring in cilantro. Serve the flavorful beef mixture over rice in bowls and garnish with tortilla strips.
