Tender beef fajitas seasoned with a flavorful Japanese spice blend, served with guacamole, salsa, and cilantro.
Ingredients:
  • 1 flank steak
  • 0.25 cup shichimi togarashi
  • 0.25 cup orange juice
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons lime juice
  • 0.5 orange, zested
  • 0.5 lime, zested
  • 1 tablespoon cornstarch
  • 1 tablespoon chili powder, or more to taste
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 1 teaspoon cayenne pepper
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground cumin
  • 1 onion, cut into slices and separated
  • 1 red bell pepper, cut into thin strips
  • 0.75 cup water
Instructions:
  • Gently pound flank steak to flatten. Massage shichimi togarashi into both sides of the steak, then wrap it in plastic wrap and refrigerate for 8 hours or overnight.
  • In a resealable plastic bag, mix together orange juice, soy sauce, lime juice, orange zest, and lime zest. Add the flank steak to the bag, coat with the marinade, remove air, seal the bag, and refrigerate for 2 hours.
  • Preheat the outdoor grill on high heat and lightly oil the grate.
  • Take out the steak from the marinade and transfer the marinade to a small bowl.
  • Grill the steak, brushing with marinade every 5 minutes, until it's seared on the outside and pink and juicy inside, 8 to 10 minutes per side. Use a thermometer to ensure it reaches 135°F (57°C) in the center.
  • Slice the steak in half lengthwise, then thinly slice across the grain.
  • Combine cornstarch, chili powder, salt, paprika, brown sugar, cayenne pepper, red pepper flakes, onion powder, garlic powder, and ground cumin in a bowl, whisking until well mixed.
  • In a large skillet, heat oil over medium-high heat. Saute onion and red bell pepper until soft, about 5-10 minutes. Add sliced steak, chili powder mixture, and water. Simmer until sauce thickens and meat shines, 3-5 minutes.
