Indulge in a healthier twist on the classic Mexican fajitas with this lighter version.
Ingredients:
  • 8 flour tortillas
  • 200g skim natural yoghurt
  • 40.00 ml chopped fresh coriander
  • 300g topside beef, cut into thin strips
  • 1 tsp freshly ground black pepper
  • Olive oil spray
  • 1 red capsicum, deseeded, cut into strips
  • 1 yellow capsicum, deseeded, cut into strips
  • 1 brown onion, peeled
  • 2 tomatoes, chopped
Instructions:
  • Preheat the oven to 180°C, then wrap the tortillas in foil and warm in the oven for 10 minutes. Meanwhile, combine the yogurt and coriander in a small bowl and set aside.
  • Coat the beef strips with pepper. Heat a non-stick frying pan over high heat and spray with olive oil. Stir-fry the beef for 2-3 minutes until cooked. Keep warm by covering with foil on a plate.
  • Lower the heat to medium. Stir in the capsicum and onion, then cook for 3-4 minutes until the vegetables are softened. Add the tomatoes and cook for another 1-2 minutes until heated through.
  • Place the beef and capsicum mixture in the middle of a heated tortilla, roll it up, and top it off with the yoghurt sauce before serving.
