Delicious beef fajitas with marinated New York strip steak, topped with salsa and Mexican cheese.
Ingredients:
  • 0.25 cup olive oil
  • 1 medium lime, juiced
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons finely chopped onion
  • 3 cloves garlic, finely chopped
  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground black pepper
  • 2 (8 ounce) boneless New York strip steaks, cut into thin strips
  • 8 (6 inch) white corn tortillas, or more as needed
  • 1 (8 ounce) jar salsa
  • 1 (8 ounce) package shredded Mexican cheese blend
Instructions:
  • Combine oil, lime juice, cilantro, onion, garlic, cumin, salt, and pepper in a bowl. Transfer the flavorful mixture to a resealable plastic bag and add steak strips. Ensure the meat is evenly coated with the marinade, remove excess air from the bag, and seal tightly. Let the steak marinate in the refrigerator for 4 to 8 hours.
  • Heat a large skillet over medium heat. Cook the steak with the marinade, stirring occasionally, until the steak is browned, cooked through, and all the liquid has been absorbed, which should take about 15 to 20 minutes.
  • Top tortillas with flavorful salsa and melted Mexican cheese before serving.
