Choose juicy and budget-friendly rump steaks for a delicious meal.
Ingredients:
  • 3 medium tomatoes, diced
  • 82.50 ml roughly chopped fresh coriander leaves
  • 1 avocado, peeled, mashed
  • 52.50 gm lime juice
  • 400g beef rump steak, thinly sliced
  • 40g packet fajita seasoning
  • 27.30 gm olive oil
  • 2 brown onions, thinly sliced
  • 1 red capsicum, thinly sliced
  • 8 large flour tortillas
Instructions:
  • Mix the tomato and coriander in one bowl. In a separate bowl, toss the avocado with 2 teaspoons of lime juice.
  • Mix steak, seasoning, and 1 tablespoon oil in a bowl. Heat the rest of the oil in a large frying pan over high heat. Add onion and capsicum and cook for 5 minutes until golden and softened. Transfer to a bowl and cover to keep warm. Reduce heat to medium-high. Cook steak in batches for 1 to 2 minutes for medium-rare or until cooked to your liking. Combine steak with the onion mixture and remaining lime juice in a bowl.
  • Heat tortillas according to the package instructions. Serve the tortillas alongside the tomato mixture, avocado mixture, beef mixture, and lemon wedges.
