Succulent steak wrapped in tortillas with zesty radish salsa - a crowd-pleaser!
Ingredients:
  • 18.40 gm vegetable oil
  • 65.63 gm lime juice
  • 3 tsp dried oregano
  • 62.50 ml roughly chopped fresh coriander leaves
  • 5.00 gm ground cumin
  • 600g beef skirt steak
  • 1 medium red capsicum, thickly sliced
  • 1 medium yellow capsicum, thickly sliced
  • 1 large red onion, thickly sliced
  • 10 mini tortillas, warmed
  • 2 medium tomatoes, seeded, finely diced
  • 2 red radishes, finely diced
  • 1 Lebanese cucumber, seeded, finely diced
Instructions:
  • Combine oil, lime juice, oregano, garlic, coriander, and cumin in a shallow glass or ceramic dish. Mix well, then add steak and coat evenly. Cover and refrigerate overnight, if possible.
  • Preheat a barbecue plate or chargrill over medium-high heat. Grill the steak for 4 to 5 minutes on each side for a medium doneness, or to your preferred level of doneness. Transfer the steak to a plate and cover to keep it warm.
  • Saute the capsicum and onion until they are tender, approximately 10 minutes. Slice the steak thinly.
  • Prepare the Radish Salsa by combining tomato, radish, cucumber, cilantro, and lime juice in a bowl, then stir to mix well.
  • Present the steak alongside warm tortillas, crispy vegetables, and zesty radish salsa.
