Family-friendly, flavorful fajitas that everyone will devour.
Ingredients:
  • 2 garlic cloves, crushed
  • 62.50 ml chopped fresh coriander leaves
  • 5.00 gm ground cumin
  • 600g beef rump steak, trimmed
  • 27.60 gm vegetable oil
  • 1 medium red capsicum, sliced
  • 1 medium yellow capsicum, sliced
  • 1 large red onion, sliced
  • 8 flour tortillas, warmed
  • Fresh coriander leaves, to serve
Instructions:
  • Combine garlic, chopped coriander, cumin, steak, and half of the oil in a bowl. Season generously with salt and pepper, then mix well to coat everything evenly.
  • In a large frying pan over high heat, heat the remaining oil. Add the steak and cook for 3 to 4 minutes on each side for medium doneness or to your preference. Allow it to rest, covered, for 5 minutes before thinly slicing.
  • Sear capsicums and onion over high heat until caramelized and soft, about 5 to 7 minutes. Fill tortillas with beef, veggies, and coriander, then roll them up and enjoy!
