Spicy beef bites with tomato pasta. Ready in 30 minutes!
Ingredients:
  • 1 2/3 cups uncooked farfalle (bow-tie) pasta or 2 oz uncooked soba (buckwheat) noodles
  • 1/2 lb beef boneless sirloin, about 1/2 inch thick, cut into 2 pieces
  • 1/2 teaspoon coarsely ground pepper
  • 3 tablespoons tomato sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon sugar
  • 1 small onion, chopped (1/4 cup)
  • 1 medium bell pepper, chopped (3/4 cup)
Instructions:
  • Prepare and cook the pasta according to package instructions, excluding the addition of salt.
  • Season both sides of beef pieces generously with coarsely ground pepper. Heat a 10-inch nonstick skillet over medium heat and cook the beef for 8 to 12 minutes, flipping halfway through, until almost cooked through.
  • In a skillet, combine all remaining ingredients except for the pasta. Simmer over medium-low heat for about 5 minutes, or until the beef reaches medium doneness (160°F). Toss cooked vegetables with pasta, then serve topped with the beef.
