Ingredients:
  • 1kg whole rib eye beef fillet
  • 20.00 ml ground black pepper
  • 45.50 gm olive oil
  • 126.25 gm cream
  • 127.50 gm vegetable liquid stock
  • 2 tsp green peppercorns, rinsed, drained
  • 40.00 ml flat-leaf parsley, chopped mashed potato, to serve
Instructions:
  • Preheat the oven to 210°C. Use kitchen string to tie the beef at regular intervals to maintain its shape while cooking. Spread pepper evenly on a sheet of baking paper and roll the beef in the pepper to coat it thoroughly.
  • In a flameproof roasting pan, heat oil over medium-high heat. Brown beef on all sides. Then, transfer the pan to the oven and cook beef for 30 minutes for a medium doneness.
  • Place the beef on a plate, cover it with foil, and let it rest for 10 minutes.
  • 1. Heat a roasting pan over medium heat. Pour in cream, stock, and peppercorns and let it simmer for 5 minutes. 2. Stir in parsley and season with salt. 3. Slice the beef and serve with gravy and mashed potatoes.
