Peppered steak with creamy mushroom sauce

Try this popular beef recipe with creamy mushroom sauce and mash for a foolproof and family-friendly mid-week meal that's quick and easy.
Ingredients:
  • 20.00 ml cracked black pepper
  • 4 scotch fillet steaks, trimmed
  • 50g butter, chopped
  • 3 garlic cloves, crushed
  • 200g button mushrooms, thinly sliced
  • 150g shiitake mushrooms, stalks removed, thinly sliced
  • 4 sprigs thyme
  • 39.60 gm red wine or Massel beef stock
  • 83.33 gm thickened cream
  • Mashed potato, to serve
  • Baby spinach, to serve
Instructions:
  • Season steaks generously with cracked black pepper and salt. Heat butter in a heavy-based frying pan over medium-high heat. Sear steaks for 2 to 3 minutes on each side for a perfect medium cook, then transfer to a plate and cover with foil.
  • In a pan, add the remaining 20g of butter along with garlic, mushrooms, and thyme. Stir often and cook for 4 minutes until the mushrooms are tender. Pour in the wine and simmer until almost evaporated. Add the cream and reduce heat to medium-low, then simmer for 1 minute until the sauce starts to thicken.
  • Plate the creamy mashed potatoes elegantly, gently lay the perfectly cooked steak on top, generously ladle the savory mushroom sauce over the steak, and present with a side of fresh spinach.
