Grilled Peppered Steak with Brandy Cream Sauce

Delicious and easy recipe perfect for guests or a special dinner date.
Ingredients:
  • 3 teaspoons cracked black pepper
  • 6 beef tenderloin steaks, about 3/4 inch thick (about 1 1/2 lb)
  • 1/4 cup finely chopped shallots or green onions
  • 1 tablespoon butter or margarine
  • 1/4 cup brandy or Progresso™ beef flavored broth
  • 1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
Instructions:
  • Prepare the grill for direct heat by heating coals or turning on the gas.
  • Season both sides of the beef generously with freshly ground black pepper.
  • Grill the beef over medium heat, uncovered, about 4 to 6 inches away from the heat source for 7 to 8 minutes on each side, achieving medium doneness (160°F) or cook to your preferred level of doneness.
  • Grill beef, then in a 1-quart saucepan, melt butter over medium heat. Sauté shallots in butter until tender. Add brandy and broth, simmer for about 5 minutes until slightly reduced. Stir in sour cream, then serve with beef.
