Sticky barbecue beef with crispy ramen noodles for extra crunch.
Ingredients:
  • 800g beef rump steak, trimmed, cut into 3cm pieces
  • 20.00 gm cornflour
  • 18.20 gm peanut oil, plus extra for shallow-frying
  • 2 x 150g packets fresh ramen noodles
  • 70.63 gm smokey barbecue sauce
  • 1 tsp garlic powder
  • 20.00 ml white balsamic vinegar
  • 16.00 gm brown sugar
  • 1 chicken stock cube, crumbled
  • Steamed gai larn (Chinese broccoli), to serve
  • Fresh coriander leaves, to garnish
  • Sliced red chilli, to garnish
  • Sesame seeds, to garnish
Instructions:
  • In a medium bowl, mix beef with cornflour, season with salt and pepper. Heat oil in a large frying pan over medium-high heat. Cook beef in batches for 3 minutes until browned and crispy all over, tossing occasionally.
  • Heat additional oil in a medium frying pan until shimmering. Tear noodles into small batches and shallow-fry for 3 minutes on each side until golden and crispy. Drain on paper towel.
  • In a jug, mix together the sauce, garlic powder, vinegar, sugar, stock cube, and 2 tablespoons of water. Return the beef to the pan, then pour in the sauce mixture. Bring to a simmer and cook, stirring occasionally, for 3 to 4 minutes until the sauce thickens and coats the beef.
  • Arrange noodles, beef, and gai larn beautifully on a large platter. Sprinkle with fresh coriander, spicy chili, and toasty sesame seeds. Present and enjoy.
