Treat dad on Father's Day to sticky sweet and spicy beef ribs that will have him licking his fingers.
Ingredients:
  • 130.00 gm tomato sauce
  • 89.38 gm honey
  • 42.00 gm Soy Sauce
  • 40.00 ml malt vinegar
  • 16.00 gm brown sugar
  • 5.90 gm powdered mustard
  • 1kg beef ribs
  • Vegetable oil, for deep-frying
  • 4 Sebago potatoes, peeled, very thinly sliced
  • Dressed spinach leaves, to serve
Instructions:
  • In a ceramic dish, mix together tomato sauce, honey, soy sauce, vinegar, sugar, mustard, salt, and pepper. Add ribs, ensuring they are coated well. Cover and refrigerate for a minimum of 1 hour.
  • Preheat the oven to 200°C and line a baking tray with parchment paper. Arrange the ribs on the tray and roast for 1 hour, flipping them halfway through, until fully cooked.
  • Place a wire rack over a baking tray lined with paper towel. Fill a large saucepan one-third full with oil and heat over medium-high heat until hot. Fry potato slices in small batches for 2 to 3 minutes until golden brown. Drain on the wire rack before serving.
  • Arrange the ribs on a platter alongside potato crisps and spinach for a delightful presentation.
