Sticky barbecue glazed meatloaf in a mug

Quick and easy BBQ meatloaves made in a mug.
Ingredients:
  • 500g lean beef mince
  • 1 small onion, finely grated
  • 1 small carrot, peleed, finely grated
  • 1 small zucchini, finely grated
  • 75g (3/4 cup) packaged breadcrumbs
  • 41.60 gm tomato sauce
  • 2 tsp beef stock powder
  • 1 1/2 tsp mixed dried herbs
  • Sour cream, to serve
  • Chopped parsley, to serve
  • 60ml (1/4 cup) barbecue sauce
  • 20.80 gm tomato sauce
  • 28.60 gm honey
Instructions:
  • In a large bowl, mix together mince, onion, carrot, zucchini, breadcrumbs, tomato sauce, stock powder, herbs, and egg using clean hands until well combined. Divide the mixture into 4 portions and gently press into four 300ml microwave-safe mugs. Cover the microwave turntable with a paper towel to catch any spills. Place mugs evenly spaced on the turntable and microwave on 70%, turning the mugs halfway through, for about 10 minutes or until fully cooked.
  • Prepare the glaze by mixing all the ingredients in a small bowl.
  • Gently drain liquid from meatloaf mugs. Evenly spoon glaze over meatloaves. Microwave on 70% power for 1 minute to set. Let sit for 5 minutes before serving with a dollop of sour cream and a sprinkle of chopped parsley.
