Japanese beef rolls

Delightful Japanese beef roll the whole family will enjoy.
Ingredients:
  • 6 beef minute steaks
  • 12 stalks asparagus
  • 12 spring onions
  • 1 carrot
  • 60ml (1/4 cup) light soy sauce
  • 40.00 ml sake (see Top tips) or dry sherry
  • 40.00 ml mirin (see Top tips)
  • 10.00 gm caster sugar
  • 36.80 gm vegetable oil
  • 40g butter
  • 100g button mushrooms, thinly sliced
  • Steamed rice, to serve
Instructions:
  • 1. Boil water in a saucepan over medium-high heat. 2. Halve the beef widthwise. 3. Place each beef half between plastic wrap sheets and pound with a meat mallet or rolling pin until 4mm thick. Repeat with the remaining beef.
  • Prepare asparagus and onions by trimming them to 8cm lengths. Cut the carrot into 12 batons, each 8cm long. Quickly blanch the asparagus and carrot in boiling water for 30 seconds. Add the onions and continue to blanch for another 30 seconds. Drain the vegetables, then place them in iced water to refresh before draining once more. Gently pat dry with paper towel.
  • Lay out a piece of beef on your work surface in a vertical position. Arrange an asparagus stalk, a piece of carrot, and a piece of onion horizontally at the bottom edge of the beef. Roll up the beef to wrap the vegetables inside, then secure with a toothpick. Repeat this process with the rest of the beef and vegetables.
  • In a bowl, mix soy sauce, sake, mirin, and sugar. Marinate beef rolls in the mixture. Heat oil in a frying pan, and cook half of the rolls for 5 minutes until browned and cooked through. Transfer to a plate, cover to keep warm, and repeat with the remaining rolls. Set aside the remaining marinade.
  • Return the pan to the heat and melt the butter until sizzling. Add the mushrooms and cook for 3 minutes, stirring occasionally, until they are nicely browned. Pour in the reserved marinade, bring it to a gentle simmer, and then remove it from the heat.
  • Arrange the beef rolls in individual bowls. Top with a generous drizzle of savory mushroom sauce and serve alongside fluffy steamed rice.
