Japanese Beef Rolls

Beef and vegetable rolls, ready in minutes after broiling, a perfect make-ahead dish.
Ingredients:
  • 12 shiitake mushrooms, sliced
  • 24 spears fresh asparagus, trimmed
  • 8 thin-cut top round steaks
  • 0.25 cup soy sauce
  • 1 bunch green onions, green parts only
Instructions:
  • In a skillet, gently cook the mushrooms in oil over low heat until soft and tender. Ensure they do not brown. In a separate pot, quickly blanch the asparagus in boiling water for about 30 seconds until bright green, then transfer to ice water to halt the cooking process. Set aside.
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Grease a broiling pan.
  • Flatten the steaks if needed by pounding them to about 1/4 inch thickness. Brush soy sauce onto each steak, then add mushrooms, green onions, and asparagus at one end. Roll up the steaks to enclose the filling and secure each bundle with a toothpick. Arrange the rolls seam side down on the broiling pan.
  • Place rolls under the broiler until golden brown on top for approximately 3 minutes. Flip the rolls over and continue to brown the other side for 2 to 3 minutes, being cautious not to overcook and risk burning or toughening the meat.
