Tangy orange juice enhances flavor in Cajun pork marinade and sauce.
Ingredients:
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 2.50 gm sweet paprika
  • 1 tsp dried oregano
  • 2.40 gm sea salt
  • 1/4 tsp chilli flakes
  • 1 large orange, juiced
  • 700g pork fillet
  • 27.30 gm extra virgin olive oil
  • 1 small red onion, finely chopped
  • 1 small red capsicum, finely chopped
  • 2 sweet corn cobs, kernels removed
  • 200g (1 cup) basmati rice
  • 470ml water
  • 425g can black beans, rinsed, drained
  • 125.00 ml fresh coriander leaves
  • Steamed green beans, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan forced) and line a baking tray with parchment paper. Mix ground coriander, cumin, paprika, oregano, salt, and chili in a bowl, then set aside 1 1/2 tsp of the spice mixture.
  • Combine the fragrant orange juice with the aromatic spice mixture, then mix in the pork and let it marinate for 10 minutes.
  • In a hot frying pan, heat 2 tsp oil. Cook the pork in the hot oil for 4 minutes until nicely browned, turning once. Transfer pork to a tray and roast for 10-12 minutes until cooked through. Allow the pork to rest for 5 minutes before slicing.
  • Heat the rest of the oil in a saucepan over medium heat. Sauté onion until soft, then add capsicum and corn and cook until softened. Mix in the reserved spices and garlic, cook until fragrant. Add rice and water, bring to a boil, then reduce heat and simmer covered for 10 minutes until rice is tender. Let it stand covered for 5 minutes, then fluff the rice and fold in beans and coriander. Enjoy!
  • 1. Preheat frying pan over medium-high heat. Add the reserved marinade along with the remaining water. Simmer and stir for 2 minutes. Strain the mixture. Serve the pork with the rice mixture and beans, then finish by drizzling with the sauce.
