Cajun pork stew

Spicy slow cooked pork with savory Southern spiced rice.
Ingredients:
  • 1 tsp ground coriander
  • 2 chorizo sausages, coarsely chopped
  • 2.00 brown onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 1 green capsicum, seeded, finely chopped
  • 2 celery sticks, finely chopped
  • 2.50 gm ground cumin
  • 2.50 gm ground paprika
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 500g Pork Belly Roast, cut into 3cm pieces
  • 400g can diced tomatoes
  • 1 corn cob, husks, silks and kernels removed
  • 400g can black beans, rinsed, drained
  • Coriander leaves, to serve
  • Lemon wedges, to serve
  • 1 tsp chilli powder
  • 1/2 tsp ground turmeric
  • 200g rice
  • 375ml chicken stock
  • 2 spring onions, thinly sliced
  • 125.00 ml coarsely chopped coriander
Instructions:
  • Preheat a frying pan over medium-high heat. Add the chorizo and cook, stirring, for 5 minutes until golden brown. Transfer to a slow cooker using a slotted spoon.
  • Sauté onion, bell pepper, and celery in the pan until onion softens. Stir in cumin, coriander, paprika, oregano, and garlic powder until fragrant. Transfer everything to the slow cooker.
  • Sear pork in a pan until evenly browned, then place in the slow cooker along with the tomato. Cook on high for 3-4 hours or low for 6-7 hours.
  • Combine the corn kernels and black beans with the pork mixture and simmer for an additional 15 minutes, or until fully heated.
  • In a saucepan over medium heat, melt butter. Add onion and cook until softened, about 5 minutes. Stir in chili powder and turmeric, cook until fragrant, about 30 seconds. Add rice, stir to coat. Pour in stock, bring to a boil, then reduce heat to low. Cover and cook for 12 minutes until rice is tender and liquid is absorbed. Let it rest covered for 5 minutes. Finish by adding spring onion and coriander, toss to combine.
  • Portion the rice into individual serving bowls, generously ladle over the flavorful pork stew, garnish with fresh coriander leaves, and offer with zesty lemon wedges on the side.
