Tender slow-smoked ribs with sweet and spicy rub, grilled to perfection and glazed in sticky BBQ sauce.
Ingredients:
  • 0.25 cup kosher salt
  • 0.25 cup paprika
  • 3 tablespoons ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon celery seed
  • 16 pounds pork spareribs
  • 1 apple, quartered
  • 1 orange, cut into wedges
  • 1 lemon, cut into wedges
  • 1 lime, cut into wedges
  • 1 onion, cut into wedges
  • 3 cups red wine
  • 3 cups water
  • cooking spray
  • 0.5 cup ketchup
  • 0.25 cup soy sauce
  • 0.25 cup lime juice
Instructions:
  • In a bowl, mix together salt, brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper, and celery seed; set aside.
  • Trim excess fat from ribs, then peel off and discard membrane covering the rib side. Cut slabs into 3- to 4-bone portions, ensuring each portion has some meat on it.
  • Massage the spice mixture onto both sides of the rib portions until fully coated. Transfer the ribs into a resealable plastic bag and refrigerate for at least 4 hours, but ideally overnight to enhance the flavors.
  • Prepare your smoker by filling the water pan with a mix of apple, orange, lemon, lime, onion, red wine, and water. If you don't have a water pan, use a metal bowl placed on the drip tray above the heat source. Smoke the ribs with your preferred wood chips at 250-300°F (120-150°C) until they are tender and no longer pink, which should take 4-6 hours, adjusting for your smoker and temperature as needed. Remember to swap out wood chips following the manufacturer's instructions.
  • Preheat an outdoor grill to medium-low heat, and lightly oil the grate. Combine ketchup, soy sauce, and lime juice in a bowl to create a flavorful barbecue sauce; set it aside.
  • Once the ribs are cooked through, take them out of the smoker and generously brush with barbecue sauce. Grill over medium heat, brushing with sauce occasionally, until the sauce caramelizes and coats the ribs perfectly, about 15 to 20 minutes.
