Enjoy tender slow cooked paprika pork infused with smoky flavor, served over fluffy rice.
Ingredients:
  • 3 large cloves garlic, finely chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon olive oil
  • 2 pork tenderloins (1 lb each)
  • 1/2 cup whipping cream
  • 2 pouches (8.8 oz each) microwavable long-grain and wild rice mix
  • 2 slices bacon, crisply cooked, crumbled
  • Chopped fresh chives, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a small bowl, combine garlic, paprika, salt, cumin, pepper, and oil to form a paste. Pat the pork dry with paper towels and coat it entirely with the paprika mixture. Transfer the pork into the slow cooker.
  • Cover the dish and cook on High heat for 1 hour. Then, reduce the heat to Low and continue cooking for an additional 3 hours and 30 minutes, or until the pork is very tender.
  • Transfer the pork from the slow cooker to a serving platter and cover it to keep warm. Pour the drippings from the slow cooker into a 12-inch skillet and bring it to a boil over medium-high heat. Add the whipping cream and cook until slightly thickened, for about 6 to 7 minutes.
  • Prepare the rice according to package instructions in the microwave. Transfer the cooked rice around the pork on a serving platter. Pour the sauce over the pork, then garnish with bacon and chives.
