Slow-Cooker Smoked Sausage and Bean Soup

Whip up a hearty smoky sausage and bean soup in the slow cooker with a mix of veggies and herbs. Ready in just 15 minutes!
Ingredients:
  • 1 lb small red potatoes, each cut into 8 pieces (about 3 cups)
  • 4 medium carrots, sliced (2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium stalk celery, sliced (1/2 cup)
  • 2 cans (15 oz each) navy or cannellini beans, drained, rinsed
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon seasoned salt
  • 1 lb fully cooked kielbasa sausage, cut in half lengthwise, then into 1/4-inch slices
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Prepare your 3- to 4-quart slow cooker by generously spraying it with cooking spray. Combine all the ingredients in the cooker, excluding the sausage and parsley.
  • Cover and simmer over Low heat for 8 to 9 hours.
  • Add the savory sausage and fresh parsley into the mixture. Cover and let it simmer on low heat for an additional 30 minutes until the sausage is heated through.
