Indulge in a slow-cooked French bean stew featuring succulent chicken, smoked sausage, and tomatoes, perfect for a cozy meal without heating up the kitchen.
Ingredients:
  • 1 tablespoon olive oil
  • 6 slices turkey bacon
  • 1 large onion, finely chopped
  • 4 boneless, skinless chicken thighs, chopped
  • 0.25 pound fully-cooked smoked sausage, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme leaves
  • 0.5 teaspoon ground black pepper
  • 0.25 cup tomato paste
  • 3 (15 ounce) cans great Northern beans, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 3 tablespoons minced fresh parsley
Instructions:
  • In a large skillet over medium heat, sizzle bacon in olive oil until perfectly crisp and golden, turning frequently for about 10 minutes. Place the bacon on paper towels to drain and cool, then crumble. Set aside.
  • Saute onion in the skillet until translucent for about 5 minutes. Add chicken, sausage, garlic, thyme, bay leaves, and black pepper. Cook until the chicken is browned for 5 to 8 minutes. Mix in the tomato paste.
  • Add the chicken mixture to a slow cooker along with crumbled turkey bacon, great Northern beans, and diced tomatoes. Cover and cook on Low for 4 to 5 hours until the cassoulet thickens and the chicken is very tender. Garnish with parsley before serving.
