Enhance pork stir fry with thick plum sauce by adding extra chicken stock.
Ingredients:
  • 106.43 gm plum sauce
  • 40.80 gm chicken style liquid stock
  • 1/4 tsp Chinese five spice
  • 500g pork leg steaks, thinly sliced
  • 350g fresh chow mein noodles
  • 18.40 gm vegetable oil
  • 1 brown onion, cut into thin wedges
  • 1 large carrot, peeled, halved lengthways, sliced diagonally
  • 200g green beans, trimmed
Instructions:
  • In a bowl, mix plum sauce, stock, and Chinese five spice. Place pork in a glass or ceramic bowl. Pour half of the sauce mixture over the pork. Stir well to coat the pork. Cover the bowl with plastic wrap and refrigerate for 1 hour, if possible.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 1 to 2 minutes until just tender, then drain and use a fork to separate them.
  • Heat a wok over high heat with half the oil, swirl to coat. Stir-fry pork in batches for 2-3 minutes until just cooked. Transfer to a bowl and wipe the wok clean with a paper towel.
  • Pour the rest of the oil into the wok over high heat and swirl it around to coat the pan. Add the onion and stir-fry for 1 minute until softened. Mix in the carrot and beans and stir-fry for 2 to 3 minutes until tender. Add back the pork, noodles, and remaining sauce mixture, then stir-fry for 1 more minute until everything is heated through.
