Make delicious plum and blueberry jam to enjoy anytime.
Ingredients:
  • 5 star anise
  • 1 cinnamon quill
  • 1 vanilla bean, split, seeds scraped
  • 1kg caster sugar
  • 1.75kg plums
  • 250g blueberries
  • 1 lemon, juiced
Instructions:
  • In a large saucepan, combine spices, vanilla bean and seeds, 500g sugar, and 750ml (3 cups) water. Bring to a boil over high heat, stirring until sugar dissolves. Reduce heat and simmer for 10 minutes to infuse flavors.
  • Prepare the plums by halving and removing the stones. Cut them into quarters and combine them with blueberries, lemon juice, and the remaining 500g sugar in a large bowl.
  • Drizzle the syrup over the fruit, remove the star anise and cinnamon pieces, gently mix everything together, and let it sit for 10 minutes.
  • Chill 3 saucers in the freezer. Divide plum mixture evenly between 2 large saucepans and bring to a boil over high heat.
  • Simmer mixture until it reaches desired setting point, around 25 minutes.
  • Allow the mixture to cool for 15 minutes, then carefully transfer it into clean, warm sterilized jars and seal them while they are still hot.
