Spiced Plum Upside-Down Cake with Oats

Upgrade the classic pineapple upside-down cake with spiced plums and oats for a delicious twist!
Ingredients:
  • 1 cup rolled oats
  • 0.5 cup boiling water
  • 1 cup brown sugar
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 2 eggs, room temperature
  • 1.5 teaspoons vanilla extract
  • 1.5 cups whole wheat flour
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground allspice
  • 2 tablespoons butter
  • 0.25 cup raw sugar
  • 0.25 teaspoon ground cinnamon, or more to taste
  • 1.5 cups diced plums
Instructions:
  • Preheat the oven to 350°F (175°C) for that perfect bake.
  • In a medium bowl, mix oats with water and allow to sit for 20 minutes.
  • In a large bowl, mix together brown sugar, 1/2 cup of butter, white sugar, eggs, and vanilla extract. Stir in the oatmeal mixture until well combined.
  • Combine and sift together flour, baking soda, 1 teaspoon of cinnamon, nutmeg, salt, and allspice in a bowl. Mix into oatmeal mixture.
  • In a preheated oven, melt 2 tablespoons of butter in a 9-inch square baking pan. Once melted, sprinkle sugar and cinnamon on top, followed by the plums. Pour batter over the plums and spread evenly.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 50 minutes.
