Spiced plum chutney

Turn plums into a delicious spread for a ploughman's lunch!
Ingredients:
  • vegetable oil
  • 4 shallots
  • 1 kg mixed plums
  • 3 fresh bay leaves
  • 1 cinnamon stick
  • 5 cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon ground ginger
  • 400 g brown sugar
  • 1 orange
  • cider vinegar
Instructions:
  • - On low heat, drizzle 1 tablespoon of oil in a large pan. - Peel and slice shallots, then sauté gently until softened and golden brown. - Stone and chop plums. - Add bay leaves and spices to the pan, fry for 1 minute, then mix in the plums. - Stir in sugar and grate in orange zest. - Mix orange juice and cider vinegar in a measuring jug to reach 450ml. - Pour the mixture into the pan, bring to a boil, then simmer until thickened, stirring occasionally. - Transfer the chutney into sterilized jars and seal immediately. - Allow to cool before storing in a cupboard for a few weeks to mature.
