Southern-spiced chicken with plum salad recipe

Try this zesty plum and avocado chicken salad with a fresh mix of herbs for a delicious and easy meal, perfect for lunch or dinner.
Ingredients:
  • 4 Australian Chicken Breast Fillets
  • 36.40 gm olive oil
  • 4 small ripe plums, stoned, cut into wedges
  • 1 avocado, stoned, peeled, sliced
  • 1 red onion, thinly sliced
  • 120g pkt Baby Rocket
  • 125.00 ml coriander leaves
  • 125.00 ml mint leaves
  • 21.00 gm lime juice
  • Lime wedges, to serve
  • 5.00 gm smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 tsp cayenne pepper
Instructions:
  • In a large bowl, mix together paprika, garlic powder, onion powder, oregano, thyme, and cayenne pepper until well combined. Add a generous amount of seasoning.
  • Combine the chicken and half of the oil with the Southern spice mix in the bowl. Mix well to ensure the chicken is evenly coated with the spices.
  • Preheat a barbecue grill or chargrill over medium heat. Grill the chicken for 5-6 minutes on each side or until fully cooked. Place the chicken on a plate and cover with foil. Let it rest for 5 minutes before serving.
  • In a large bowl, mix together plum, avocado, onion, rocket, coriander, and mint. In a separate bowl, whisk lime juice and the rest of the oil until well combined. Pour the dressing over the salad and gently toss to coat. Serve on individual plates, topped with sliced chicken and lime wedges.
